Chipotles are medium-spicy chili peppers characterized by a strong and pleasant taste with deep smoky notes. These, despite the sweet scent, turn into an earthy burning sensation that lasts several minutes. Chipotles are spicier than, say, anaheim or poblano peppers, but milder than cayenne or serrano pepper.

Jalapeños are harvested when they are still green. To make chipotles, they can ripen to a beautiful red color. They are harvested only when they are almost dry. They are then placed on metal grates on which they are smoked. The result is dried, dark brown, smoky chili peppers. These peppers can be used whole, or in flakes or powder. Tomatoes, onions, spices and vinegar are sometimes added to create a sauce called "adobo". A guajillo chili pepper or chili guajillo or chile guaco (Spanish: chile guajillo) is a landrace variety of chili pepper of the species Capsicum annuum and is the second most commonly used dried chili pepper in Mexican cuisine.



The red habanero pepper is one of the hottest peppers in the world, approximately 50 times hotter than the jalapeño pepper. The thin-walled fruits are round, wrinkled and reach about 5 cm in length and 3 cm in width. Their shape is similar to that of a mini pepper. They have such an intense fruity flavor that many other chili peppers can hardly compete with the habanero. Their tropical fruit flavor makes them an essential part of any sauce and they pair especially well with tropical fruits. Their color varies from light green to red (sometimes even orange).
