Mole Amarillo is based upon aji amarillo, the warm yellow pepper witht its unique warmth and color. aromatic thanks to a blend of tomato, onion, garlic, herbs and cold, Mole Amarillo is versatile, pairing well with a variety of foods. Serve with enchiladas or empanadas instead of the sauce, fish, beef, pork, poultry or vegetables.

Mole Verde. The main ingredients are pumpkin seeds, green chile, green tomatoes, chile poblano, chile de árbol, tails onion, radish leaves, celery, cilantro, lettuce, chard, parsley, epazote, onion, garlic, chicken broth and tortilla. Ideal with chicken, pork, rice and beans.
