Description

Pinole, or pinolillo, is roasted ground corn, which is then mixed with cocoa. The resulting powder is used as a nutrient-dense ingredient for the production of various foods such as cereals, pastries, tortillas and beverages. The name comes from the word Nahuatl pinolli, which means corn meal. Today, pinole is generally made by hand in clay furnaces on natural fire. Depending on the type of pinol and the quality of its ingredients, pinole can be high in key vitamins and nutrients, including protein, amino acids, fiber, and antioxidants. Due to the large amount of fiber and slow digestion of corn, pinol also has a very high feeling of satiety, so those who consume it feel full for a longer period of time. Along with chia, pinole is the main dish of the Tarahumara Indians, reclusive indigenous people living in Mexico's Copper Canyon, who call themselves Rarámuri, which means "barefoot runners."
